So do you bake it twice? First to make bread pudding, then bake in to scones?

Here’s the recipe: they are called wet Nelly scones.

It's in the national trust book of scones. Did not see it on line, so 450g self-rising flour, Itsp baking powder, 125g butter, 50g sugar, 1 egg, 400g wet Nelly cold and crumbled, 120-150ml milk. Cut butter into flour mix, add milk, egg, and wet Nelly, cut out scones, bake at 200c for 15-20m.

It’s a special bread pudding made of Nelson Cake from Liverpool but I just use whatever bread pudding I have and it’s great.

So this is the third incarnation of this cake: it was first a walnut cake that we didn’t like, so I turned it into bread pudding to give it oomph. Then it goes cold into a scone recipe. It is a classic “never let anything go to waste” recipe.

It’s really good and ALSO makes my judgmental parsimonious ancestors who live in my head and yell at me when I am frivolous happy.

I wrote it up for someone - wet Nelly is the bread pudding made of Nelson cake but any bread pudding works!
