I soak a bunch in whisky and gin and freeze a lot. Will probably do some jam too.
As it happens, my first job as a teenager was weighing tart cherries when the growers brought them in from the fields. I worked in Michigan for the Wilderness brand fruit company. Over the summers, I "graduated" to the office, and the test kitchen was nearby. They'd bring in samples of new recipes!
They make great pie filling, and cherry sauce (like apple sauce) and cherry salsa.
I remember those days... before the cherry maggots discovered my tree. (Years fighting them, hard to eradicate... hope better for your colleague.)

Lots of sugar and into the freezer for winter snacking. Yummmmmm!
