I have always paid a hefty price for red salmon. Pink salmon is a lot cheaper but unfortunately not as tasty. Anything in the wild, or what's left, will slowly go extinct with no functioning EPA.
I have a handwritten family recipe for canned salmon "loaf" that's quite tasty, and it's from the Depression era. It includes a biscuit topping. When I was a kid, we were very poor, but we still had chuck steak fairly often because it was so cheap. Now even beef stew meat is as expensive as steak.

You can make tofu taste like anything if you marinate it in the right marinades. Check out marinades for tofu. Tofu is a complete protein. Not what we are used to, but a reasonable option.

I know a commercial salmon fisherman in Alaska...the middle man is making far more than they used to. He said it is almost not worth the time, effort and expense anymore because the fisherman who literally risk their lives for the job are BARELY making it now.

In the 60’s my family mostly ate hamburger patties. Not hamburgers. Just Patties. Also canned vegetables. Except for the summer mom was digging dandelion greens out of the yard.
One Friday a month. The other Fridays were tuna casserole, frozen fish sticks, or grilled cheese with tomato soup. Good Catholic family 🙄

Nuts are a no no. Chocolate chips are ok bc they blend in. Nuts can be in the icing of a cake but never inside the cake I don’t make the rules 🤷🏼♀️
Thanks! Personally, we have these little touches of autism like problems with textures and mouth feel (and sounds) throughout my family - and I just find the little nuances among all of us so interesting. Sometimes my family just sits around comparing notes on all of our little weird issues.

That daughter was diagnosed with ADD without the H in second grade, and Ritalin made all the difference in her life. Went from can’t get anything done to straight A student overnight. But she ditched it because she didn’t like the way it made her feel in high school. Later she had OCD things too.
I don’t, but one of my daughters does. We used to have to get up an extra half hour in the morning to get her socks on in such a way that the seam at the toes was acceptable in the way it felt on her foot inside the shoes. Literally 30 minutes of adjusting! All the kids still laugh about that.

I used to make those. Loved them. Then I lost my recipe and I haven’t made them in years.
I memorized Heloise of Heloise of the helpful hints recipe. One can salmon. Drain juice. Add 1 tbs of baking powder to the juice so it foams up, an egg, the salmon and some mixed onion and mix it up. Drop by a tablespoon into hot oil. The baking powder makes the croquette lighter.

Forgot the cracker crumbs in the recipe. Can sub bread crumbs. The baking powder gives them a lacy appearance on the outside.
Unless I'm baking, I am an eyeball kind of cook. I don't measure ingredients for savory items.
And if you are feeling extra thrifty, jack mackerel instead of pink salmon. I serve with mashed taters and creamed peas and carrots. If I want to get fancy, I'll toss some dried dill in there.

Two cans of salmon, bones and dark meat/skin removed (dogs love the dark meat) half a red onion, 4 celery stalks, both diced, 6 saltine crackers, two eggs, mix well, heat cooking oil, I use vegetable oil, it tastes better, brown on one side, flip, sprinkle generous amounts of old bay, enjoy.

What also used to be cheap was liver. I bought some recently and it was $5.99 a pound for beef liver. Liver was the fix long ago for women with heavy periods and anemia. Yes, I know people go ew! at the thought of liver. Granny used to chop gizzards and add them to pasta sauce.
Veal liver with onions and apples is so delicious. My people always overcooked it. I just get it browned and out it goes!
I have not seen veal liver in stores for years. The only way I can get beef liver is frozen for six bucks a pound these days.
Also oxtails, flanken cut ribs, cross cut beef shanks etc have all skyrocketed. I think it started with the snout to tail movement.
The other thing that used to be cheap was pork steaks and pork butt. I rarely see pork steaks and pork butt is close to three bucks a pound these days. "Snout to tail" isn't new. It is the cuisine of poverty my ancestors ate.
And it can all be cooked deliciously. They serve all kinds of organs in Europe. No waste!
My family came from Italy. Granddaughter of a pig farmer. I remember butchering season and cranking the meat grinder. Europe had periods of severe food rationing but organ meats were not limited. Same thing during American rationing in WWII. Every culture has a history of poverty cooking.

Liver and onions, salmon patties, gizzards, fried chicken, dandelion greens. Everything cooked in bacon grease. Cornbread and buttermilk. My grandmother was from the south, everything was homemade (biscuits, bread, pies, butter, buttermilk), she was poor as a church mouse and an amazing cook.
Let's hope the economy doesn't tank or I may be cooking squirrels. Or rabbits.
We had that too! Rabbit is actually very good. Not that I would ever get it, or many of the other things, past my lips anymore.
My neighbor who thankfully moved away used to sit outside shooting squirrels. I had some at a girl scout camp out and it was pretty tasty. Grandma would cook the rabbit in a tomato sauce and serve it with polenta. I got stuck cleaning the polenta pot.
I have a stash of bacon grease in the freezer. Why let it go to waste when olive oil is so expensive these days? Bacon grease makes a marvelous mayo. Perfect for a tomato sandwich.

The secret is deeply caramelized onions and a bit of balsamic vinegar added to the braising liquid. Alas, the days of restaurants deep fat frying chicken livers is a dying menu item. Housewives used to save them when they bought a whole chicken and freeze them until they had enough for a meal

I bought another freezer last month and when I finish the ice cream season, that ice cream bucket will be the repository for veggie scraps and bones for soup when fall gets here.
Husband has another surgery coming up so the plan is to fill it with homemade frozen meals during his recovery. My Kroger store does meat markdowns often. I have a stash of filet mignons that I got for $2.50 each. Befriend the meat counter man. You will be rewarded.

Me too. He was in the OR two years ago today and I was in the back of an ambulance headed to Chicago with a broken sacrum a year ago today. I'm weary of medical care but scared silly we might lose health care coverage.

My dad had fried chicken livers on the menu for years. I sometimes find them marked down and cook them up for the dogs. 1.5 pounds for less than a buck is cheaper than those 3 oz. tubs of snooty brand named dog food at $1.34 each that feed one dog.

I keep a can in the pantry at all times. Quick supper on the fly. I used to make these once a week but then I gave up the deep fat fry that makes them so good. Creamed peas and carrots and mashed taters rounds out the plate. Pan fry or bake in the oven now and again.
Cheapskate frig door tartar sauce in a hurry. Mustard, mayo and pickle relish. Capers if you are feeling flush. Chopped pickles if you got them.

I was in Costco yesterday and wild caught salmon is double the price from last year. ($12-$15 to $27-$32). Not sure what is going on besides inflation because this is Alaskan salmon.

Was waiting for someone to mention Pink Salmon as the species we all grew up eating. It's caught in the most quantities and canned while most Red and King Salmon is top shelf fresh or flash frozen for the table. That can of Red Salmon Jess pictured here is much more expensive than a can of Pink.
