This is where I'd be tempted to step outside of the statblock and simply say "Fiction First" and let the PC roll for that. Or to emphasize a specific class, like a Rogue, say the PC gets the knockout if they can score a Severe hit.

Or alternatively, because we can work on different timescales, if a PC is trying to wrestle a guard into submission, we can make a couple of action rolls to simulate that. This makes the Guards HP more of a countdown timer, can they run through them before failing an action roll raising an alarm?
