Panzer Dragoon is considered by many to be a masterpiece. Plus there's Castlevania Rondo of Blood, considered to be a best in the series by many.

Rondo's on Turbografx/PC Engine. The Saturn has Symphony of the Night, also one of the best Castlevanias (and just games, period) of all time. Never played the Saturn version myself, so can't attest to its quality, but I know it has some version-exclusive content.
