I have a lentil soup recipe somewhere that I love, it that uses dried apricots and their sweetness balances out the earthiness of the lentils perfectly - I’ll dig it up.

ooo this sounds great
It’s from a defunct blog so all I have are screenshots. I usually do half a bag of green lentils and find that’s plenty. I also sometimes use veggie broth instead of water and sometimes use frozen or fresh kale to save myself some time, but the roasting does add a nice flavor.
I also really like this as a use for lentils: minimalistbaker.com/vegan-sloppy...
And this too (I fucking love lentils): cooking.nytimes.com/recipes/1021...
there's a lentil pasta recipe i love that is basically: simmer a cup of brown lentils with mirepoix and bay leaf till tender. make a quick marinara sauce in a separate pan. add the lentils to marinara. boil penne, combine with pasta. lot of parsley and olive oil and the end.
Would
taylor, thank you so much for taking the time to post all of these!
You’re very welcome!
I hate sloppy joes, but a lentil version sounds delicious 🖤
