Check it with a fingernail or something once it looks good and dry. It's humid here too and mine was pink and then white for days until it was dry and solid. In between it was solid white but still pliable. I ended up putting a heater in the room to help bake it but I'm unsure if that was correct
Over the last 25 years of home ownership I have never seen a drywall/paint/handyman guy who didn't have some sort of a "super jet blowdryer" heat gun in his van because...humidity just is.
Well… some patching mud needs time to dry, and using a hair dryer or heat gun can shorten that… especially if ts a thin skim coat
I’ve learned this in my new job… the different types of “mud” and their drying times, how much they shrink, how thick you can apply them… Long story short, get the thick quick-dry 25 minute mud, and dilute it with water for a drywall or skim-coat thickness. If you’re in a hurry, dry it w/hairdryer

I used some spackle about a week ago, and even when it finally dried it was crumbly and awful. went back and got joint compound and tried again. seems better so far, but won't really know til I paint

If you have to do more I recommend the fast set powder. Pick based on how many minutes you want it to be soft. Doesn't shrink or crack.

i think that number is how long you have to work with it before it gets too hard to work with 20 minute mud regularly takes 6 hours to dry for me
I gave up and followed the HuffPo clickbait "best easy spackle kit on Amazon" which just arrived today, figuring I otherwise won't get around to getting real spackle and tools at the hardware store. Haven't opened it yet, but the cat likes the Amazon box.
