Gender is how we organize not only our society but also our mental models of people. If you think of everyone you've ever met since you were a child, do you remember all their eye colors and hair colors? Of course not. You might not even remember what they look like. But you remember their gender.
Try it with a 3yo. "Oh you met and a friend? Describe them." The first thing will be "he" or "she". They might not remember any of the other characteristics. They might not even have words for them. They will know their gender (unless they're non conforming)
