Just google “walnut pizza” and see what kinds of ideas are out there. Ditto pistachio. Think of white pizzas — they’re so flexible. I don’t use a lot of them but maybe you want to. I tend to find 1/4 cup or less sufficient for a pie. Sicilians would use less.
I am not your pizza nut guru & don’t want to give cooking tips all night. I didn’t think this post would blow up tonight. Nuts that work on pizzas because they are in Italy are: walnuts, pine nuts, pistachios. Thick crust = longer cooking time & needs bigger nuts. Thin crust — pine nuts okay.
Whatever. Just don’t want it too small to burn. So thick crust versus thin is different cooking times.
Pineapples can die in a fire. I’m sure someone has made a good fig pizza but I don’t think it would be my jam. :)
I know others have come along but I still think the Prima Strada on Cook makes one hell of a pizza. There’s a reason they got ranked in the top 10 in Canada one year.

Watch the Netflix Chef’s Table: Pizza episode on Chris Bianca. His famous pistachio pie I described is featured. But I was in Sicily for 6 weeks. Pistachios are common with things like cream, leek, Italian sausages, etc. Walnuts with ricotta, peaches, etc.
My late-season lettuce looks incredible. I have to do a fully loaded salad tomorrow. Last Friday’s rain did amazing things. 🌱

Oh you’re vegetarian— hah! Ignore that. Both my pies tonight were vegetarian — one with just cheese and homegrown cherry tomatoes, olive oil, and then fresh basil when serving. The other was cheese/pisachio/red onion/rosemary/oil/salt. Really becoming a being veggie pizza fan.
They’re both very similar but when you put raw Italian sausage on in 1/2” balls, they cook to perfection and it’s slow enough that the crust can absorb the fat. It’s amazing. :)
The guy in Netflix Chef’s Table: Pizza does the red onion & pistachio one. I first had nuts on pizza at a Sicilian pizza shop in Sofia, Bulgaria, that remains one of the nicest pizzas I’ve ever had — Italian sausage balls, red onions, pistachios, a light cream sauce, rosemary, mozzarella.

Folks, if you’ve never put nuts on pizza, you’re missing out. Sicilians like pistachios, & walnuts are not uncommon in northern Italy. Nuts absorb cheese oil, they get toasty but soft. There’s a famous one with only pistachios, red onions, olive oil, rosemary, salt, mozza. To die for.
Eating pizza carefully with a semi-frozen mouth. Mostly just the right side of my lips now. Hopefully I have a tongue in the morning.

There was another lot, too, where I'd photographed stags eating, as a couple brothers would forage together, but that lot was a regular haunt for them, for puddles and grass. It, too, is now being developed. I mean, there's tons of nature around me and YET those spots were coveted by wildlife.
I have never really realized this until this year. A character home got removed from a lot here and it sat abandoned for a couple years. Dogs would lose their mind in passing and I'd tell people there were rabbit poops, etc, all through the property. Well, it's being built now, so, that's over.
