Wouldn't it depend on the state? I know most states I've been in have a "stop and identify" thing where you HAVE to at least give your name if they ask. Don't have to show ID, but still say who you are. And, of course, bad idea to lie as that's perjury.

Of course, you NEED an good, accurate, temp probe to be absolutely sure. One trick I've used with long smokes is starting in the smoker and finishing in the instant pot. You only get that smoke flavor/smell in the first two hours, and you can get the tenderness in a pressure cooker faster/easier.

Ribs are the absolute easiest. You put them in and let them go for that amount of time. Boston butt and brisket are in that weird area of "seems easy, but is actually a lot of work" as they take FOREVER. Depending on thickness, you're probably looking at 10 - 12 hours easy.
