Evacuate to a plate covered in paper towels (or a draining rack if you're fancy like Jeff) and you've got Irish Boxty Cakes. One of our favorites and easy to make with garden ingredients. Take that, Fascists!!
It's up to you what oil (low smoke points are not your friend, though) and how deep you fry. I did a very shallow pour of vegetable oil in a frying pan over medium heat. Form into patties and fry until golden brown and crispy on both sides.
Mix it all up!! Season well with salt and pepper. If you like a little garlic powder or cayenne can go in as well.
WE NEED SOME CHEESE!! Personally, I like to use Dubliner cheese and finely chopped corned beef, but I don't have either of those and have to go through what's in my fridge anyway, so I used aged white cheddar.
In a bowl; combine ALL the potatoes, onion, flour (this is about a half cup, you want a roughly 1:1:1: ratio with the tatties) and egg. This is all that goes into a basic version. But I'm a complicated fella.
Shred and rinse the remaining potatoes, allow them to drip or squeeze them dry
While the mashed potatoes are being made, dice a small onion. This is also from my garden.
Divide the tatties, and use half to make mashed potatoes however you like them. Traditionally, the mashed should be leftover from the night before, but I literally just harvested these before I started.
Strictly speaking, all we really need are the potatoes, onion, egg, and some flour (not pictured), but optional additions like certain cheeses really punches it up.

In The Great Outdoors, do you think "The Old 96er"'s weight is determined pre-cooking. I don't go full-on Melvin P. Thorpe, but when they say it's pre-cooked weight, then render off a lot of fat and water (like a LOT of Quarter Pounders), I feel a little cheated.

Frankly, that doesn't sound ruined. A fast paced techno-thriller about Horton and his thwarting a potential nuclear war with the Who in the Kremlin (with potential cameo by Jack Clark) sounds like a page turner.
