Gabriel Bonci-style al teglio pizza but with NYC toppings, 80% hydration with 10% whole wheat, baked in a Lloyd pan. These slice up perfectly as small or as large as you want. Itâs really supposed to have Parma ham and arugula and shit but I have a teenage daughter that ruled against

This is my first attempt at a Gabriele BoncĂ-style al taglio dough. It looks like a regular Sicilian or Grandma pie but the dough is much wetter at 80% and has 10% whole wheat. Itâs bubbly and very flavorful dough. Next bake will be better tho (in my mind it always is)

Well, as Pookleblinky often makes the case, these instruments now are cheap and good (pre-tariffs anyway). You can get them set up professionally at Guitar Center or wherever for a few extra bucks and youâll likely never have a problem with intonation for years after.
Itâs actually not that bad, as beginners only use the first 3 frets on each string or so for a long time. The intonation issues become more obvious when youâre up past the 12th fret and say, fret 13 should be the same note as fret 1, but itâs off.
