It does actually make things much quicker and easier, and honestly prep is more fun in my experience, but yeah not strictly necessary unless its dangerous

oh yeah it does make things a lot more pleasant i'm just... surprised it is as big a deal as it is. i still suspect it's bc they're watching cooking youtubers etc. who are professionals who cook much more frequently and to higher standards.

The main reason you want to do it is because a sharp knife is less liable to catch or slip (like when cutting thru tomato skin, eg) and most injuries happen because your knife catches or slips while you're doing routine cutting or chopping
