As they say, they go 'woody' The great thing about homegrown is that you can select them roughly similar size which helps cooking of course As you hint we like cropping a few quite small because they can be tremendously sweet

Not necessarily. That might be over watering Look at the beets themselves. If they are over 2.5 instead they are well ready. If smaller they might just be undernourished Did you feed them? Small is okay, just one bite and they are gone!
All three are a nice size. Yes I agree with the over watering. They've had some organic liquid veg feed. So probably give em a go soon.
Growing stuff is always an adventure. After all these years I still cannot get Basil to grow well indoors. This year I found the answer. "British Basil" seeds that happily grow outside in a large pot and after after a slow start have flourished and produce great tasting basil! (Chiltern seeds)

Possibly 🤔 I struggled with the feeds here to start with, so I created my own feed of favourites using a list. It's the main feed I look at, and you're one of the people I added to it! I only add people who's posts I enjoy or find interesting 🤗 but I don't post much as I haven't the time to reply.
Yes lists are the way to go. That's how I work. Largely ignore the Blue sky standard three feeds
As long as you are confident that your lists won't be used as targets for blocking and abuse.

Yes, roasting also brings out the sweetness 👍🏼 Pressure cooker uses less fuel (!) but maybe later crop we will try roasting again. Thanks It also works wrapping in foil and put on the BBCUE coals direct but need to keep turning them!
Yes, I’ve lost a fair few on the BBQ over the years - found ‘em the following morning, charred to a crisp. Bottom oven of the Aga overnight also - fatal!
No Aga, so not an error we will make but I suspect we might have tried that if in possession of one. I'll note that to pass on as advice to others. My learning for the day! Did you Bbcue direct to coals or in foil?
Have experimented with both methods. Foil is more forgiving of neglect, and avoids the need to remove the ash & inevitable charred bits. But there’s something endearingly primeval about cooking directly on glowing embers.
Haven’t yet tried roasting them in the air fryer, which should be more energy-efficient than the oven.
I'll get tbh onto it. It does dry things out a bit so might need a bit of help. I'm wondering out loud here...balsamic splash? Probably just a splash of water would do the trick

Right, tip with beetroot. Don't pick them until the water is boiling or the oven is hot. Seriously. Get them out of the ground & into the pot as quickly as you can, and you'll be stunned at how sweet they are. Mum though I sugared mine! Every hour matters as the sugars turn to starch quite quickly.
