A+ pita work! Mine didn’t form a pocket unless I was super-lucky.

I bake mine in the oven on the back of a sheet pan, I noticed if I don't flour the pan or the bread after rolling out enough, it won't puff. Like if 1 little spot sticks, it won't puff. I'd like to bake on the stovetop though. I hate heating up the oven so hot to 550.

I have a lodge “pizza pan” that I use for things like tortillas and pita etc etc.

Try the flour thing on the pitas though, so it can easily slide around.

Yup! They're yeasted, so they need a rise.

Both? It’s leavened, but the puffing action that creates the pocket is essentially the same as a tortilla

The yeasted dough portion gives it structure to withstand all the shawarma and tahini that you’re going to slop in there, but you bake it it starts very flat like a tortilla so the steam builds inside and creates the pocket.

A good tortilla will also soufflé

Idky, but I can have a pita sandwich at a restaurant and it's wonderful, but if I buy pita at the grocery and try to make my own sandwich, it ends up falling apart and I have to eat everything with a damn fork.

My theory is that almost any bread wrapped in plastic a couple days deteriorates. I’ve had decent luck reviving grocery store pita a bit by patting a bit of water on both sides and then giving each side a little time on a grill or frying pan/griddle. But freshness matters.

Have you tried "chapati," the Indian (India) bread? Put some mango pickle on it. You'll like it, if love Indian food like I do. If not, it's ok too!

Carbon steel. Too thin for cast iron and you generally won’t see rivets in them
