It's all in the marbling. The last one I made was absolutely delicious. But you're right. If you cook it too long, it's dry and stringy once you suck all the cooking juice and gravy out of each bite. It's one of those recipes I'm eternally trying to perfect.

Years ago, I bought a vacuum sealer for my wife as a present, and no, she didn't divorce me. 😆I've been buying meats and chicken parts when on sale since then, shrink wrapping them and putting them in the freezer, it saves a little bit of money here and there.
We are a big beef eating family and I grew up in beef country out in Western KS - that said we swore off beef for the time being. I bought a two pack of pork shoulders for $26 Sunday and ended up with 4lbs of ground pork and 4lbs of pulled pork. Meanwhile a beef brisket sat untouched at $98 on store

Farmers are sending their cows that would normally have calves to raise for beef to slaughter. They are getting top dollar for the meat. But they are diminishing the herds and it takes years to raise cattle from birth to slaughter. The cost of feed is high and so is demand. It's a perfect storm.
