I've been having fun making dishes with Holy Basil from India, Thailand, Laos etc. Very fragrant. A Caprese salad would be a nice variation with using Holy Basil if you can find some. I had to grow it but I have a nice patch growing in my garden now.
I grow hot peppers. My favorite way to use them is to dehydrate them then grind them and make spicy mayonnaise for grilled sandwiches or other dishes.

I've had fun milling whole grains into flour and learning to bake breads. Rye, wheat, corn, and rice mainly so far. It's fun. Pumpernickel is my favorite. Those loaves look lovely.
Getting a maillard reaction (browning) is pretty much impossible on liquid. If you pat dry the bird after marinating you'll get better results in the oven. Just a suggestion.

I've been doing similar interpretations of thai krapaow style seasonings in pasta salads lately. Garden tomatoes, garlic, chiles, holy basil spicy mayo, chicken etc. Bulgher salad would be a natural adaptation as well to try next.
