It’s been a big hoagie week for me due to outdoor group outings, and I keep wrapping up half hoagies with my extra hair tie and now one of my hair ties smells like hoagie and it kills me to know that there’s some sick fuck in this city who is SO into that and I’ll never know who it is.

Makes sense. I came down in Spring of 06 to help a buddy gut his house. While I was there, I inadvertantly made several contractors, bartenders, crabbers, etc. get all sorts of emotional. I stopped asking questions and just did my work, making myself available to whoever wanted to talk. Few did.
But my nerves are still very very raw around my experiences after the storm. Displaced family, ruined houses, the loss of places I loved. To this day I have to be careful how much conversation I want to engage in about it. How much I want to be exposed to retrospectives. (5)
I was in grad school at LSU when Katrina hit, and then a volunteer medic for evacuees at the River Center. I alternated between grad seminars, the undergrad sections I taught, and the shelter, where I often slept under a table between shifts. (1)

Living in DC in my early 20s, I'd stop at a Viet restaurant on the way home from the bars and have a Bánh Xèo and a beer. I'd been eating them for about 15 years before I discovered that people ate Bánh Xèo in the daytime, too.

The only paper checks I've written in 25 years are to a shuttle driver in southern Mexico, who only takes MXN and US checks. I fish there a couple of times a year, and I have to stock paper checks just for that dude.

The OG pasta machine is great for sm-med tortillas too. And yes, laminated doughs. Rough puff for British sausage rolls, even proper hot water crust.
I just looked at a video of some nonna making sfogliatelle with a pasta machine. That NEVER occurred to me. What a simple solution for the part I wanted to avoid!
I've never tried. Seems like a lot of work for a showy treat, one better purchased from a pro, as you say. OTOH, I might make pasteis de nata. It's a simpler use of that laminated dough, and honestly, probably my favorite pastry, whether the Portuguese version, or po tat, the variant from Macau.
An OG, crank-handle pasta maker is game changing for making sfogliatelle. But just buying them is mo’bettah.
