Okay, for those who asked, here's the simple version: * 1 can Cento tuna (in olive oil) * 1 stalk celery, finely chopped * a big glob of Duke's mayo * about 1.5 tbsp of pickled red onions, finely chopped (like so: www.anildash.com/2022/11/15/c... ) * paprika, salt, pepper, and parsley to taste

I put this on lightly toasted potato bread. If you want to get fancy, you can add some garlic confit (which I like to keep around the house, it goes great in everything!) minced up in there, or some diced up white onion, chili powder, turmeric, or any other strong flavor to balance things out.

do you buy in your garlic confit or make it? I've started getting those whole bags of pre-peeled cloves cheap in our veg box and poaching the whole lot in a Le Creuset cocotte covered in olive oil when I have the oven on for something else

👍 the cocotte is great because I can just put the whole thing in the fridge (I keep thinking I will drain the oil and store the confit separately and then I just take out whatever I need with a clean teaspoon and put it back in the fridge!)

This all sounds amazing. I'll add one more suggestion/option for those who might enjoy: Finely diced dill pickles, and/or some pickle juice are both fine additions to a tuna salad.

you know, it's all the stuff _together_. I always have really good pickled red onions that I've made, that goes in there. I splurge on the Cento tuna, it's expensive but it's good as hell. l love chopping stuff up so I probably spend way too much time on mincing up celery, but the texture is great.
