If you use chicken thighs that solves that part of the equation. Bit higher in fat content admittedly, they are quite delicious though.

This one for onion bhajis from @thecurryguy.bsky.social is a great baseline. Sub the onion for zucchini and adapt as needed. Can also deep or shallow fry the mix, it's very versatile!
Pakoras and bhajis are made in a very similar way to these using gram (chickpea) flour, which is gluten free. I've got some in the pantry so will make the next batch with that and a bunch more spices, heh :)

I'm a real fan of long ferment doughs, where all you need to do is a couple of coil folds during bulk ferment and let time do the rest. Obviously if you can't fit it into your schedule it's not useful, for those times there's the dough hook :)
