Having lived there for 30 years, an alternative etymology for Stratford-atte-Bowe was a meander in the River Lea. It's worth noting that 'Stratford' is a contraction of Street (Roman Road) Ford. So, it's a shallow crossing, for the Roman Road, at a bend in the river.
