My kitchen is my workshop. I got an induction stove two months ago. It is faster, cleaner, better in every way than my old gas stove. I worried that I'd miss gas, but now I'll never want to go back.

Everyone's gonna have batteries soon, blackouts will be a thing of the past.
Very much a quality thing. Cheap induction has crude adjustments. But you can literally tell the Impulse stove, "I want to keep this pan at 120 degrees" and it will continually adjust power to maintain that exact temperature. (It's effectively silent, too.) Quality will trickle down in the market.
Sure, but there's nothing intrinsic about China that makes PV production only possible there. Other centers of manufacturing will emerge. It's already happening. It's just not analogous to fossil fuels.
All physicists know that some heat just ... tastes different than other heat.
Heat batteries predate electrochemical batteries.
Induction heat is *vastly* more precise & steady than gas heat. Especially on the Impulse stove, where they literally have a temp. gauge that can hold food at an exact temperature.
I'm pretty sure they're using it for heat, no?

I'm so induction-pilled that when I browse Zillow (which is ... not infrequent) the sight of a gas stove just utterly puts me off. It's a primitive, gross, smelly, pain in the ass.
No one goes back -- same with any/every switch from combustion to electricity.

People are singing the praises of induction in the comments, as they should, but no one has yet called out how *easy they are to clean*, especially relative to gas. As the kitchen cleaner in the Volts household, this is quite meaningful for me.
Electricity is our era's primary source of good news.
Here @hannahritchie.bsky.social gets at one my pet points, which is that EV batteries are lasting much longer in the field than is predicted by (very conservative) models.
You can buy a stove with an embedded battery that will work on 110v. Pricey tho. www.impulselabs.com
Impulse is making some really cool add-ons that will accomplish this kind of thing.
Feel like it's worth periodically reiterating that "conservative" is not a protected class. Being a minority puts you in a protected class. Hating minorities just makes you a dick. There is no moral or legal requirement for any organization to have some minimum number of dicks.
The earthy, emotional experience I remember from gas is the depression of facing clean-up.

You can bypass that if you get one of the fancy new induction stoves with batteries in them ... but they are pricey.
There's not no market, but demand projections are shrinking pretty steadily.
It's not the same at all. Buying a solar panel does not create an ongoing relationship of dependence.
Induction stoves are quieter, cooler, and produce less toxic pollution than gas. On the other hand, they also cook better, as a growing number of professional chefs recognize.
At least we know there will always be customers in the Middle East thirsty for [record scratch] ...
