My kitchen is my workshop. I got an induction stove two months ago. It is faster, cleaner, better in every way than my old gas stove. I worried that I'd miss gas, but now I'll never want to go back.

Very much a quality thing. Cheap induction has crude adjustments. But you can literally tell the Impulse stove, "I want to keep this pan at 120 degrees" and it will continually adjust power to maintain that exact temperature. (It's effectively silent, too.) Quality will trickle down in the market.

Induction heat is *vastly* more precise & steady than gas heat. Especially on the Impulse stove, where they literally have a temp. gauge that can hold food at an exact temperature.
