Yes!! This is the basic recipe - slice onions, pack into jars (tight, but not too tightly), pour brine over, store in fridge for up to 3/4 weeks. Takes about 3 days before they start getting good. You can use any mix of vinegars, I like seasoned rice vinegar, marinated black garlic. Go crazy!

Is there a posting on Blue Sky with the recipe @missrecreate.bsky.social that sounds like something right up my alley food wise. I love onions and have recently been introduced to fermented black garlic.
Red onions, about 7/8 sliced fairly thinly, I use a mandolin, and it makes about 4/5 jars. I’ve packed them in way too tightly before & they don’t work as well, but you can still get a lot in a jar. The marinated black garlic is a nice addition.
