I freeze it in ice cube trays. The tricks that work for me are: 1. Fill your trays, but cover each cube with a layer of olive oil on top to preserve freshness. Then cover firmly with saran wrap. 2. If you have a recipe that includes parm, don't add that in before freezing, wait til serving.

Our rescue here in Colorado is constantly plucking corgs & friends from Texas or New Mexico, so maybe expand the search there? It is a dire situation in those states I have heard. (I'd recommend our rescue but they cannot adopt out of state.)
